The sharpening steel has a factory grit size of 1000, which according to W├╝sthof corresponds to the Japanese grit 800. Fine sharpening steel that can be used to give that little bit of extra sharpness to your knives that are not yet blunt.

When a knife’s edge becomes dull, you can reset the edge with a ceramic steel. The difference between a ceramic steel and honing steel, is that a ceramic steel will actually grind away material from the knife, allowing it to reset the edge. Ceramic sharpening steels are slightly less abrasive and will gently sharpen knives in comparison to a diamond sharpening steel resulting in a finer edge.

Although ceramic is harder than steel, it is brittle and will break if it is dropped.
