The versatile Victorinox 41529 Santoku knife is shorter, thinner, and lighter than the traditional Western chef’s knife, making it an all-around excellent addition to any kitchen. Only 7 inches tip to handle! Intended for dicing, mincing, and slicing, the Santoku knife has a strong, straight edge that provides even landing from tip to heel, and is meant to get the job done with a single downward cut. This style of knife incorporates the sheep’s foot spine design, and a Granton scalloped edge which is ideal for cutting thin slices of thin boned or boneless meats. The Victorinox stamped blade is made from high-carbon stainless-steel that is conically ground length and crosswise. This results in a wider break point and an edge that is more resistant to fracturing while creating less friction when cutting. A unique tempering process creates an edge that can be continually re-sharpened for a lifetime of use. The black Fibrox handle is slip-resistant and comfortable.
